This Keto Shakshuka is a delectable and simple breakfast or brunch dish that is ideal for those on a low-carb or keto diet. The spicy tomato sauce complements the eggs and feta cheese perfectly, making for a filling and satisfying meal.

  • Cook Time: 15 minutes
  • Total Time: 25 minutes

Instructions

  • In a large skillet over medium heat, heat the olive oil.
  • Cook until the onion and bell pepper are softened, about 5 minutes.
  • Cook until the garlic, cumin, smoked paprika, and cayenne pepper are fragrant, about 1 minute.
  • Bring the diced tomatoes to a simmer.
  • Make four wells in the tomato mixture with a spoon and crack an egg into each.
  • Sprinkle the top of the mixture with the parsley and feta cheese.
  • Cook, covered, until the eggs are set, about 5-7 minutes.
  • Season to taste with salt and pepper.
  • Serve immediately with your favorite low-carb bread or on its own.
