With this Keto Zucchini Noodles recipe, you can enjoy a delicious and healthy low-carb meal. For added texture and flavor, the zucchini noodles are combined with roasted pumpkin and sautéed cherry tomatoes, then topped with sesame seeds.

  • Prep Time: 10 minutes
  • Cook Time: 25 minutes
  • Total Time: 35 minutes

Instructions

  • Preheat the oven to 400°F.
  • On a baking sheet, drizzle 1 tablespoon olive oil over the pumpkin and season with salt and black pepper.
  • Cook for 20 minutes at 350°F.
  • In a skillet over medium heat, heat the remaining olive oil.
  • Cook for 3-4 minutes, or until the cherry tomatoes begin to soften.
