This keto-friendly vegetable lasagna uses roasted cauliflower instead of noodles and includes homemade meatballs and a rich marinara sauce. It's a hearty, comforting meal suitable for any night of the week.

Instructions
- Preheat the oven to 400°F.
- Toss cauliflower florets with olive oil, salt, and pepper in a large mixing bowl.
- Place cauliflower on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and lightly browned.
- Make the meatballs while the cauliflower is roasting: Combine ground beef, egg, almond flour, garlic powder, onion powder, oregano, basil, salt, pepper, grated parmesan, and parsley in a large mixing bowl.
- Place the mixture on a baking sheet in 1-inch balls.
- Meatballs should be baked for 15-20 minutes, or until browned and cooked through.
- Reduce the oven temperature to 375°F.
- Spread 1/2 cup marinara sauce on the bottom of a 9x13 inch baking dish.
- Half of the roasted cauliflower should be placed on top of the sauce.
- Half of the meatballs, another 1/2 cup sauce, and 1 cup shredded mozzarella cheese on top.
- Layer the remaining cauliflower, meatballs, sauce, and mozzarella cheese on top.
- Top with the remaining 1/4 cup grated parmesan cheese.
- Bake for 20 minutes, covered with foil.
- Remove the foil and bake for another 20 minutes, or until the cheese is melted and bubbly.
- Allow for a few minutes of cooling before slicing and serving.
