Keto Avocado Toast with Crushed Walnuts and Soft Boiled Eggs Recipe

This keto avocado toast with crushed walnuts and soft boiled eggs is a delicious and healthy breakfast option that is high in healthy fats and low in carbs. The creamy avocado and crunchy walnuts complement the soft boiled eggs perfectly, making this dish both filling and nutritious.

  • Total Time: 20 minutes

Instructions

  • Toast the keto bread slices until golden brown in a toaster or pan.
  • Remove the pit from the avocado and scoop out the flesh into a bowl.
  • With a fork, mash the avocado and season with salt and pepper to taste.
  • Bring 1 tablespoon of white vinegar to a boil in a separate small pot.
  • Add the eggs to the boiling water with care and cook for 6 minutes for a soft boiled egg.
  • While the eggs are cooking, crush the walnuts with a fork or a mortar and pestle in a small bowl.
  • Evenly spread the mashed avocado on the toasted bread slices.
  • Crush the walnuts and sprinkle over the avocado.
  • When the eggs are done, use a slotted spoon to remove them from the pot and place them in a bowl of cold water for 30 seconds to stop the cooking process.
  • Peel and cut the eggs in half.
  • Sprinkle salt and pepper to taste over the crushed walnuts and soft boiled egg halves.
