Instructions

  • Whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper in a large mixing bowl.

  • Blanch the asparagus in a large pot of salted boiling water for 2-3 minutes, or until tender but still crisp.
