Keto Poached Eggs with Zucchini and Avocados Recipe

This keto-friendly breakfast recipe is simple to prepare and high in healthy fats and protein. Poached eggs are served with sautéed zucchini and sliced avocado for a delicious and filling breakfast.

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes
  • Total Time: 20 minutes

Instructions

  • Fill a saucepan halfway with water and heat it to a boil.
  • To the water, add vinegar and salt.
  • Reduce the heat to a low setting.
  • Cook for 3 minutes after cracking the eggs into the water.
  • Set the eggs aside after removing them from the water with a slotted spoon.
  • Sauté the sliced zucchini in olive oil in a separate pan until tender.
  • Serve the zucchini on two plates.
  • Serve with sliced avocado and poached eggs on top.
  • Season to taste with salt and pepper.
